For some extremely good calorific goodness and the laziest meal ever, I give you Jamie Olivers, Spinach and Feta *couldn’t find filo pastry in tescos* pie
My dad bought me Jamie Oliver’s 30 minute meals for Christmas. I live for the photography in his books! It is to die for!
As badly put together as as the book is I have decoded some good recipes from it – this one happens to be the best!.
Sorry Jamie – but I want one recipe per page not three all mashed up in a complicated have to find my place while the pan is boiling over way!
I pretty much ignored most of the recipe the second time I made this because I never have any of the ingredients and 5 eggs? srsly!? it doesn’t need them!
- 2 eggs
- Pre rolled Puff pastry, My local tescos, which is huge by the way, refuses to stock even basic necessities, like air fresher, and filo pastry!
- 300g Feta.
- 400g Spinach – I just chucked in as much as I could cope with, I hate leaves
- 50g Cheddar, or in my case double gloucester
- Cayenne Pepper, Nutmeg, Oregano, Salt and Pepper – Only the last two are really necessary!
Preheat oven to 200°C (400°F/gas mark 6)
Take your lazy persons pre-rolled pastry and lay it over your chosen tray, I used a flan dish, because I like it. I’m not a fussy cook!
Crumble feta, break eggs and grate cheese – mix.
I like mine small so it doesn’t resemble leaves, did I mention I hate leaves? If I wanted to eat leaves I’d eat a tree. If I order a salad I expect vegetables. Not a shrub on a plate. I digress.
Heat the spinach in a frying pan with a knob of butter until its wilty. Technical terms only!
Add to your above mixture…mix!
Pour it out in the middle of your pastry and wrap pasty around the mixture. If you come from some sort of Cornish pasty making background I imagine you could do something clever at this point. My pastry skills, need improvement, so I make do with swearing then I give up and chuck it in the oven.
Cook for 18-20 minutes until golden brown.
